Urfa biber is a treasured Turkish chili pepper known for its smoky, mildly spicy, and raisin-like flavor profile. Grown in the Şanlıurfa region of Turkey, these sun-dried peppers are crushed and slow-cured, creating dark crimson and black flakes that are slightly moist and packed with umami. To achieve this the Isot peppers goes through a two-part process, where they are sun-dried during the day and wrapped tightly at night. This process is called 'sweating', and works to infuse the dried chili with the remaining moisture of the pepper. The result is an appearance ranging from deep purple to a dark, purplish black. Isot pepper is less spicy than many other chili peppers, but provides a more lasting build of heat
