Where do vanilla beans come from and how are they used

Basic uses, facts and applications for Indian vanilla beans

To ensure superior quality vanilla beans, Slofoodgroup adheres to the following best practices to ensure we are consistently crafting only the finest vanilla for consumers to enjoy. 

Sourcing, only mature ripe green pods are purchased from approved suppliers that adhere to natural and organic practices of cultivation of vanilla orchids. An agroforestry method of growing vanilla is utilized interweaving vanilla orchids amongst the natural forest canopy. 

Sorting, all vanilla is properly sorted before scalding in hot water baths. The proper sorting of vanilla pods before scalding allow for accurate control of time and temperature required fore vanilla to be submerged in hot water baths. This process produces more consistent and uniform cooking and sweating of the vanilla beans. 

Sun drying, pods are slowly dried naturally in the sun for precisely controlled periods of time and massaged daily during this process while beans are still warm from the overnight sweating. The massaging of the vanilla beans helps to evenly distribute the natural oils over the beans, produces the proper final texture of the bean pods and allows the curers to estimate the moisture, straightening the pods and assess if additional sunning will be need throughout the process before moving on to the next step of processing. 
 

Shade drying, shade drying is the controlled drying of vanilla beans over a covered area open area, on vented racks, in which vanilla beans are slowly dried gradually lower the moisture content of the vanilla beans and stabilize the water activity of both the inner and outer pod. 
 

Conditioning, the last, and very important step in producing quality vanilla beans is, inbox conditioning. This is where vanilla beans are placed in wax paper lined wooden boxes and allowed to age for a period ranging from 60-120 days to properly develop the aroma of the vanilla beans. During this time vanilla is constantly monitored and checked for signs of mold and any beans that show signs of infection are removed and discard. The pods are allowed to age until ready for sale to consumers worldwide. 

Mexico is widely believed to be the birthplace of vanilla. In modern times, most vanilla beans available today come from Madagascar, Papua New Guinea, Indonesia Uganda Comoros and other vanilla production growing regions. The bean pods themselves come from a vanilla vine, a climbing variety of orchid known commercially as v. Planifolia or v. Tahitensis. To obtain fruit from the orchid plant hand pollination of the vanilla flower must occur within 12 hours of flowering. Once pollinated the flower bears the green vanilla fruit. Over a period of about 9 months for full maturity of the pods. An additional 4- 6 months of curing and processing are required before the vanilla beans themselves are usable for food preparation. Vanilla is now grown widely across the world in areas that are generally 10-20 degrees of the equator, like these vanilla beans grown in the lush and fertile soils of India

 

To use vanilla beans in cooking and baking, cut your vanilla beans lengthwise from top to bottom and using the backend of a chef knife, scrap the inside of the pod to remove the vanilla seeds from the inside of the pod. Use as directed in recipes. Some recipes may call for one vanilla bean, some recipe may call for multiple vanilla beans. For consistency purposes, we recommend always using vanilla beans by weigh in your recipe. For instance, instead of using one vanilla bean it is suggested users weigh the amount of vanilla used in recipes by the gram. This ensure a very consistent, practical and economical use of each vanilla bean pod.  The remaining empty bean pod should not be discarded but instead used in making vanilla extract or further dried and ground into vanilla bean powder for making vanilla sugar.

Indian vanilla beans can be used in any application where Madagascar vanilla beans are used. This includes but is not limited to manufacturing vanilla extract, fragrances, brewing, cosmetics, and general food industry applications.
