There is nothing like an easy dinner to throw on during a weeknight! Sometimes you just need to keep it simple—simple as ready-made fish patties, brioche buns, and our pickled ginger saffron mayo sauce. Both rich and fresh, our sauce matches the tender and juicy fish patties in the burger. The saffron adds an unexpected kick of flavor. We kept the burger toppings simple but feel free to switch to crispy onions instead of the fresh alternative as well as coleslaw instead of salad. The fish patties can be either deep-fried or baked. Serve with fries or potato wedges.
Fish Burgers Topped With Pickled Ginger Mayo

Ingredients
- 4 fish filets
- 4-8 lollo bionda leaves
- 2 tomatoes, thinly sliced
- 1 red onion, thinly sliced
- 4 burger buns
- 1 tablespoon butter
For the sauce:
- 1 cup mayo
- 2 tablespoon pickled ginger, finely chopped
- 1 teaspoon lime or lemon juice
- 5-6 saffron strands
- Flake sea salt and freshly ground black pepper to taste
Procedure

Cook the fish fillets according to the package’s instructions.

In the meanwhile, add the mayo, pickled ginger, lemon juice, and saffron strands and mix well; season to taste and set aside.

Melt the butter to a frying pan and lightly toast the burger buns.

Spoon the ginger saffron sauce into the toasted buns, top with lollo bionda, fish fillets, onions, and tomatoes; drizzle a little more ginger saffron sauce on top and serve.
