Ingredients
For chai spice mix
4 cardamom pods4 cloves
2-star anise
2 teaspoons ground cinnamon
1 teaspoon ground ginger powder
½ teaspoon ground nutmeg
For banana bread
1 ½ cups all-purpose flour1 teaspoon baking soda
½ teaspoon salt
2 teaspoon chai spice mix
½ unsalted butter, at room temperature
½ cup brown sugar
¼ cup granulated white sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
3 ripe bananas (about 1 ¼ cups)
For the cinnamon cream cheese frosting
4 ounces cream cheese, softened¼ cup unsalted butter, softened
1 ½ cup confectioners' sugar
1 teaspoon ground cinnamon
2 tablespoons milk (optional)
½ teaspoon vanilla extract
Directions to make your chai spiced banana bread
- Preheat the oven to 350°F. Grease a loaf pan and set it aside.
- In a small jar, grind the cardamom pods, cloves, and star anise. Combine the ground spices with cinnamon, ginger, and nutmeg to create the chai spice mix. Set aside.
- In a medium bowl, combine the flour, baking soda, chai spice mix, and salt. Mix well and set aside.
- In another mixing bowl, add the butter, white sugar, and brown sugar; beat until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, followed by the vanilla extract, and beat well. Scrape the bottom and sides frequently and mix until pale and light.
